Make your Own Mini Pizzas

Equipment

knife, peeler, chopping bard, large bowl, mixing jug, 2 baking trays or pizza trays. scales, rolling pin

Steps

  • Set oven to 220 Deg C and heat up a baking tray on middle shelf.

First make the tomato sauce

  • Chop onion finely and in a frying pan on medium heat saute with a little olive oil for 5 minutes

  • Once translucent, crush the garlic add oregano, stir for one minute and then add the tinned tomatoes, salt and pepper.

  • Allow to simmer for 15 - 20 mins

Meanwhile, prepare toppings of choice and arrange on a board.


Next prepare the dough

  • In a large bowl add the flour, baking powder and salt. 

  • Stir to combine, then make a well in centre, adding the yoghurt.

  • Using the back of a fork, combine well until a rough dough forms, then use hands and kneed for a few minutes in the bowl, adding a little more flour if too sticky (but not too much, or the dough will be tough)

  • Place dough on a floured surface and divide into 4 equal sized pieces

  • Roll into balls, and roll out flat.

  • Place directly on to the hot baking tray and cook for 2 minutes

  • Remove from oven, flip the pizza bases over and cover with tomato sauce, leaving a small rim around the edge, as crust

  • add toppings of choice, then return to the oven for 5-10 minutes, or until crusts are toasted and cheese bubbling.

Ingredients

For the Base

  • 300g self-raising flour, plus extra for dusting

  • 1 tsp baking powder

  • ½ tsp salt

  • 300g natural yoghurt

Pizza Sauce:

  • 400g tinned tomatoes

  • 1 onion

  • 2 cloves of garlic

  • 1 tsp oregano

  • 1 tbsp olive oil

  • 1 tbsp capers (optional)

Your choice of Toppings:

  • 100g fresh vegetables: courgette/ mushrooms/ tomato/ pepper/ spinach/ onion

  • 200g cheese: feta/ mozarella/ cheddar/ parmesan

  • Handful of herbs: basil/ oregano/ thyme

  • Other: olives/ capers/ sweetcorn/ artichokes/ sunblushed tomatoes/ham/ chorizo/ tuna/ anchovies/ lemon zest
