Benefits: Raw cacao is the most nutrient-dense form of chocolate, providing an excellent source of magnesium, Iron and antioxidants. Nuts, such as Pistachio and Almonds are a great source of vitamin E, magnesium, fibre, and protein. They may help balance blood sugar and can help reduce blood pressure. Berries provide a rich source of fibre, vitamins, minerals and antioxidants.

Raw chocolate brownies with pistachio an


100 g almonds, skin on
250 g (approx 12) Medjool dates, pitted
3 tbsp maple syrup
100g Raw cacao
½ tsp salt
50 g pistachio nuts, finely chopped

20g coconut


Blend the almonds in a food processor until fine crumbs. Add the dates, syrup, cacao, and salt and blend until it forms a dense dough.

Chop the pistachio nuts and knead into the mixture.

Line 20cm square baking dish with baking paper and press in the dough until smooth. Store in the fridge for at least 1 hr.

Cut the brownies in small squares, then halve in triangles. Sprinkle chopped pecans and coconut. Serve with 250g strawberries, halved. Mixed with 1 tsp balsamic vinegar and a few leaves of chopped mint.
