MARINADED TOMATO, AVOCADO, AND BASIL WITH MOZZARELLA
Benefits: Brimming with Essential fats, Protein and Lycopene, this salad is a great all-rounder. Omit the Mozarella for a plant based version. Tomatoes provide a rich source of lycopene, a powerful immune-modulating antioxidant. Tomatoes also contain beta-carotene, folate, potassium, vitamin C, and vitamin E. Strong evidence indicates that higher lycopene intake can help protect against prostate, lung, stomach, colon, oral, breast and cervical cancers. Lycopene is most abundant in the concentrated form of tomatoes. A teaspoon of tomato puree per day can be taken as a preventative method, or added to soups and stews and in dressings and sauces.
