GO TO GRANOLA
WITH WALNUT AND CRANBERRY
Benefits: Oats offer a slow release of energy, rich in minerals, B vitamins and soluble fiber (beta glucans), which is beneficial for gut health. Cinnamon may have a positive effect on blood sugar, helping to support insulin sensitivity, and is beneficial for people with metabolic issues, such as diabetes, or PCOS. Walnuts provide us with a balanced source of omega-3s and omega-6s essential fats, vitamin E, folate, vitamin B6 and magnesium.
Ingredients:
2 cups oats
1 cup walnuts
1/2 cup coconut flakes or desiccated coconut
1/2 cup cranberries
1/2 cup pumpkin seeds
1/2 cup ground flaxseeds
1/2 cup chia seeds
2 tsp cinnamon
1/4 cup coconut oil
1/4 cup maple syrup
1/4 cup applesauce (optional)
Method:

Chop the nuts. Mix in a large bowl with all the other dry ingredients.

In a saucepan, melt the coconut oil, maple syrup, apple sauce, and cinnamon in a pan over medium heat.

Pour into the dry ingredients and mix until everything is well coated.

Place the mixture on a lined baking tray and place in the oven at 180 degrees, cook for around half an hour, turning occasionally.

Store in an airtight container and enjoy with yoghurt and fruit for breakfast.
