WITH WALNUT AND CRANBERRY

Benefits: Oats offer a slow release of energy, rich in minerals, B vitamins and soluble fiber (beta glucans), which is beneficial for gut health. Cinnamon may have a positive effect on blood sugar, helping to support insulin sensitivity, and is beneficial for people with metabolic issues, such as diabetes, or PCOS. Walnuts provide us with a balanced source of omega-3s and omega-6s essential fats, vitamin E, folate, vitamin B6 and magnesium.

Ingredients:

2 cups oats

1 cup walnuts

1/2 cup coconut flakes or desiccated coconut

1/2 cup cranberries

1/2 cup pumpkin seeds

1/2 cup ground flaxseeds

1/2 cup chia seeds

2 tsp cinnamon

1/4 cup coconut oil

1/4 cup maple syrup

1/4 cup applesauce (optional)

 

Method:

  • Chop the nuts. Mix in a large bowl with all the other dry ingredients.

  • In a saucepan, melt the coconut oil, maple syrup, apple sauce, and cinnamon in a pan over medium heat.

  • Pour into the dry ingredients and mix until everything is well coated.

  • Place the mixture on a lined baking tray and place in the oven at 180 degrees, cook for around half an hour, turning occasionally.

  • Store in an airtight container and enjoy with yoghurt and fruit for breakfast.
