Eating the rainbow is one of the simplest concepts to follow, in order to make a positive move for our health and well-being every day. The colours in fruits and vegetables provide us with a range of phytonutrients beneficial for health. When building a sustaining rainbow plate, I look to bring in as many colours as I can, and if not cooking with meat or fish, I use beans and pulses, tofu, nuts and seeds as the source of protein and essential fats, that will provide me with the nutrients I need, and keep my energy levels stable.
