SMASHED AVOCADO WITH SALSA AND ALFALFA
Benefits: Avocado is an excellent source of an essential monounsaturated form of fats, they are high in soluble fiber, which helps lower cholesterol levels and may help maintain stable blood sugar levels. High in vitamin E, an antioxidant that regulates inflammation and improves skin health. Also rich in minerals potassium and magnesium. Alfalfa sprouts contain high phytoestrogen content and vitamin K that helps to minimize symptoms associated with menopause and PMT.

Ingredients:
half an avocado,
a handful of alfalfa sprouts,
1 tsp fresh salsa
1 slice sourdough toasted
Method:
spoon out the avocado flesh and smash onto toast
spoon over with salsa and top with sprouts.
sprinkle with a pinch of salt and cracked pepper
