5 MINUTE SALAD POTS
WITH MISO DRESSING
These simple 5 minute salad pots are a great way to help maintain your healthy goals when on the go.
Shake them up and serve.. No more soggy salad in your packed lunch. 💪 🌈

Ingredients:
2 carrots
1/4 red cabbage
6 tomatoes
2 radishes
100g pre cooked quinoa
1 little gem lettuce
1 handful parsley
1 spring onion
Miso dressing:
3tbsp olive oil
2tbsp rice wine vinegar
2tsp miso paste
1tsp soy sauce
1/2tsp sesame oil
1/2 tsp maple syrup
Method:

Add all dressing ingredients in a jam jar with lid and shake well.

Take 2 pint size jars with lids and equally share out dressing.

Slice cherry toms in half and add to the jars.

Shred cabbage with a peeler or finely slice with a knife and add to the pots.

Grate carrots and share add to the pots.

Now for the quinoa, followed by radishes, thinly sliced.

Finally chop lettuce, parsley and slice the spring onions. Add these to the pots and secure with lids.

Store upright in fridge until ready to use, then shake up, and serve out in a bowl or plate. (Adding a source of protein such as a filet of fish/ chicken/ boiled egg or legumes
